Health, ethics and environment: a qualitative study of vegetarian motivations.

This qualitative study explored the motivations of vegetarians by means of online ethnographic research with participants in an international message board. The researcher participated in discussions on the board, gathered responses to questions from 33 participants, and conducted follow-up e-mail interviews with 18 of these participants. Respondents were predominantly from the US, Canada and the UK. Seventy per cent were females, and ages ranged from 14 to 53, with a median of 26 years. Data were analysed using a thematic approach.

Factors affecting adherence to a raw vegan diet.

The purpose of this study was to evaluate adherence and identify predictors of adherence to a raw vegan diet (i.e., uncooked plant foods) following a stay at a raw vegan institute. In this cohort study of guests at a raw vegan institute, subjects completed written questionnaires upon arrival and 12 weeks later. Of 107 eligible guests, 84 participated. Mean age was 54 years, 23 were male, and 73 white. Fifty-one completed the 12-week follow-up. Eight (16%) reported their diet to be 80% raw vegan at baseline and 14 (28%) at follow-up.

Adopting a plant-based diet minimally increased food costs in WHEL Study.

OBJECTIVE:To assess the cost of adopting a plant-based diet. METHODS:Breast cancer survivors randomized to dietary intervention (n=1109) or comparison (n=1145) group; baseline and 12-month data on diet and grocery costs. RESULTS:At baseline, both groups reported similar food costs and dietary intake. At 12 months, only the intervention group changed their diet (vegetable-fruit: 6.3 to 8.9 serv/d.; fiber: 21.6 to 29.8 g/d; fat: 28.2 to 22.3% of E). The intervention change was associated with a significant increase of $1.22/ person/week (multivariate model, P=0.027).

Meeting nutritional needs on a vegetarian diet.

A vegetarian is a person who consumes a diet consisting mostly of plant based foods including fruit, vegetables, legumes, nuts, seeds and grains. Some vegetarians also consume eggs and dairy foods. Individuals choose to follow a vegetarian diet for a range of reasons, including animal rights and religion, but two common reasons are the health and environmental benefits of plant based eating.

Behavioral change theories can inform the prediction of young adults' adoption of a plant-based diet.

OBJECTIVE:Drawing on the Theory of Planned Behavior (TPB) and the Transtheoretical Model (TTM), this study (1) examines links between stages of change for following a plant-based diet (PBD) and consuming more fruits and vegetables (FV); (2) tests an integrated theoretical model predicting intention to follow a PBD; and (3) identifies associated salient beliefs. DESIGN:Cross-sectional. SETTING:Large public university in the northeastern United States. PARTICIPANTS:204 college students. MAIN OUTCOME MEASURES:TPB and TTM constructs were assessed using validated scales.

A worksite vegan nutrition program is well-accepted and improves health-related quality of life and work productivity.

ACKGROUND/AIMS:Vegetarian and vegan diets are effective in preventing and treating several chronic diseases. However, their acceptability outside a clinical trial setting has not been extensively studied. The aim of this study was to determine the acceptability of a worksite vegan nutrition program and its effects on health-related quality of life and work productivity.

Beliefs and attitudes toward vegetarian lifestyle across generations.

The objective of the study was to examine whether reasons to adopt vegetarian lifestyle differ significantly among generations. Using a Food Frequency Questionnaire (FFQ), we identified that 4% of the participants were vegans, 25% lacto-ovo-vegetarians, 4% pesco-vegetarians and 67% non-vegetarian. Younger people significantly agreed more with the moral reason and with the environmental reason. People ages 41-60 significantly agreed more with the health reason. There are significant differences across generations as to why people choose to live a vegetarian lifestyle.
