Plasma kinetics of chylomicron-like emulsion and lipid transfers to high-density lipoprotein (HDL) in lacto-ovo vegetarian and in omnivorous subjects.

PURPOSE:

Previously, it was showed that vegan diet improves the metabolism of triglyceride-rich lipoproteins by increasing the plasma clearance of atherogenic remnants. The aim of the current study was to investigate this metabolism in lacto-ovo vegetarians whose diet is less strict, allowing the ingestion of eggs and milk. Transfer of lipids to HDL, an important step in HDL metabolism, was tested in vitro.

Effects of carotenoids on aflatoxin B1-induced mutagenesis in S. typhimurium TA 100 and TA 98.

The effects of beta-carotene, canthaxanthin, and extracts of tomato paste (containing lycopene) and orange juice (containing cryptoxanthin) onaflatoxin B1 (AFB1)-induced mutagenesis in S. typhimurium TA 100 and TA 98 were investigated. Inhibition of mutagenesis was studied during and following completion of AFB1 metabolism (i.e., after the addition of menadione), thereby permitting separate examination of the metabolic activation and phenotypic expression phases. Each experimental carotenoid, except lycopene, inhibited AFB1-induced mutagenesis in both tester strains.

Antioxidant activity of fresh apples.

Vitamin C is used as a dietary supplement because of its antioxidant activity, although a high dose (500 mg) may act as a pro-oxidant in the body1, 2. Here we show that 100 g of fresh apples has an antioxidant activity equivalent to 1,500 mg of vitamin C, and that whole-apple extracts inhibit the growth of colon- and liver- cancer cells in vitro in a dose-dependent manner.

Cultured psoriatic fibroblasts from involved and uninvolved sites have a partial but not absolute resistance to the proliferation-inhibition activity of 1,25-dihydroxyvitamin D3.

We examined the responsiveness of cultured dermal fibroblasts from biopsies of uninvolved and involved areas of skin from six patients with psoriasis to the cell-proliferation-inhibition activity of 1,25-dihydroxyvitamin D3 (1,25-(OH)2-D3). Cultured fibroblasts from age-matched controls responded to 1,25-(OH)2-D3 (at 0.01, 1, 10, and 100 microM) in a dose-dependent fashion, whereas cultured psoriatic fibroblasts from involved or uninvolved skin showed no inhibition of proliferation when exposed to 0.01 or 1 microM of 1,25-(OH)2-D3.

Sweet potato in a vegetarian menu plan for NASA's Advanced Life Support Program.

Sweet potato has been selected as one of the crops for NASA's Advanced Life Support Program. Sweet potato primarily provides carbohydrate--an important energy source, beta-carotene, and ascorbic acid to a space diet. This study focuses on menus incorporating two sets of sweet potato recipes developed at Tuskegee University.

The effect of cooking method upon the titratable acidity of a popular vegetarian dish--scope for reducing its erosive potential?

The purpose of this in vitro study was to determine the effect of cooking method on the erosive potential of ratatouille. Two cooking methods, stewing and oven roasting, were applied to standardised ingredients taken from the same fruits and vegetables. The resultant dishes were liquidised and diluted with 100 mls of distilled water. Five 25 ml samples of each group were titrated to pH 7.0 against 0.1 Molar Sodium Hydroxide.

Statistical model for predicting non-heme iron bioavailability from vegetarian meals

Availability of non-heme iron has been extensively discussed when meals comprise heme as well as non-heme iron, but seldom so for exclusively vegetarian meals. The present study aimed to develop a statistical model for predicting non-heme iron availability from a composite vegetarian meal.
